Introduction
Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtain food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
Glamorgan sausage (Welsh: Selsig Morgannwg) is a traditional Welsh vegetarian sausage for which the main ingredients are cheese (usually Caerphilly), leeks and breadcrumbs. It is named after the historic county of Glamorgan in Wales.
The earliest published mention of the dish is from the 1850s in the book Wild Wales by George Borrow, although earlier records in the Glamorgan Archives show a version which contains pork. The modern vegetarian version became popular during the Second World War when meat was harder to come by, and is now mass-produced by at least two companies. Variations include swapping the leeks for onions, as well as different herbs and spices, and various types of cheese. (Full article...)

The oldest known book on Portuguese cuisine (Portuguese: Cozinha portuguesa), entitled Livro de Cozinha da Infanta D. Maria de Portugal, from the 16th century, describes many popular dishes of meat, fish, poultry and others.
Culinária Portuguesa, by António-Maria De Oliveira Bello, better known as Olleboma, was published in 1936. Despite being relatively restricted to an Atlantic, Celtic sustenance, the Portuguese cuisine also has strong French and Mediterranean influences. (Full article...)

Garlic (Allium sativum) is a species of bulbous flowering plant in the genus Allium. Its close relatives include the onion, shallot, leek, chive, Welsh onion, and Chinese onion. It is native to Central Asia, South Asia and northeastern Iran. It has long been used as a seasoning and culinary ingredient worldwide, with a history of several thousand years of human consumption and use, including also use as a traditional medicine. It was known to ancient Egyptians and other ancient cultures for which its consumption has had a significant culinary cultural impact, especially across the Mediterranean region and across parts of Asia. Pictured are Oatmeal Stout Brownies. This recipe, created by Joe Stutler, was a national finalist in the 2006 Cooking With Beer Challenge. The malt and oats in the beer enhance the flavor of the chocolate in these delicious brownies. Not overly cake-ey, not overly fudge-ey, the texture is nicely balanced. They're also decadently chocolate, and surprisingly light (thanks to the eggs). Great with a fruity beer, such as a lambic (Framboise, yum!).
Thomcord is a seedless table grape variety and a hybrid of the popular Thompson Seedless or Sultanina grape (a Vitis vinifera variety) and Concord grape (a Vitis labrusca variety). Thomcord was developed in 1983 by Californian grape breeders working for the Agricultural Research Service (ARS), an agency of the United States Department of Agriculture (USDA), as part of a test to better understand a new seedless grape breeding procedure.
Its aromatic, "labrusca" flavor is similar to that of Concord, but mellowed by the mild, sweet taste from Thompson Seedless. Thomcord grows well in hot, dry climates, ripens between late July and mid-August, and tolerates powdery mildew. It is a productive variety, yielding an average of 15.1 kg (33 lb) of grapes per vine, but has produced as much as 30 to 32 kg (66 to 71 lb) per vine in grower trials. The berries weigh between 2.72 and 3.38 g (0.096 and 0.119 oz) and have a medium-thick, blue-black skin that adheres to the fruit, unlike Concord, which has a thick skin that can slip off the pulp easily. The aborted seeds in the fruit body are relatively small, but larger than those in Thompson Seedless. (Full article...)

Jeffrey L. Smith (January 22, 1939 – July 7, 2004) was the author of several cookbooks and the host of The Frugal Gourmet, a popular American cooking show. The show began in Tacoma, Washington, as Cooking Fish Creatively on local PBS station KTPS (now KBTC), where it aired from 1973 to 1977. It then moved to WTTW in Chicago, and finally to KQED in San Francisco where it aired from 1984 to 1997.
