Both Stavros and Danaos are common Greek names, and I see that the article is in the category "English people of Greek descent", so it would appear that the answer to both your questions is Greek. A quick search on Google revealed, rather more tenuously, "Stav Danaos makes Afelia, a Greek/Cypriot dish with memories of his childhood" for the BBC Radio Scotland programme "The Kitchen Cafe" - see https://twitter.com/bbckitchencafe/status/337912203795652608.
