Fairly well-written, only a few comments:
- General
- Two dablinks need to be fixed [1]

- Say either "African American" or "African-American" throughout the article.
- Lead
- Per WP:MOSLEAD, the lead should be three good paras long covering all the major aspects of the article.
Will give a thorough read once done.- The lead reads much better now, but the variants and racial stereotypes should also be mentioned, add a few lines.
- History
- The section appears a bit choppy, please combine paras.
- We generally don't wikilink continents
- Would be good to add when the middle ages were.
- in the 18th and 19th century, in the United States Is the comma needed?
- I think "lard" should be wikilinked
- Source for the 3rd para?
- among both blacks and whites Should we call them so even when we talk of the present day?

- The economic/caloric necessity...today's fried chicken. Still appears unsourced.
- I see a bit of overciting at the end of the fourth para.
- Can this section be illustrated to make it more interesting? Perhaps with an image of lard?
- Description
- Can this section be expanded? Are there no other sources that can describe its composition and impact on health?
- Convert templates for 40 grams, 12 grams
- Source for last line of 2nd para?
- is filled with fat I think "consists mainly of fat" sounds more proper here.
- monosodium glutamate (or MSG), which is a dangerous acid Can you include something on its effects on health?
- in any of the methods described above I think you refer to the methods in the next section. Should the last para then belong to "Preparation"?

- The batter can/may contain "can" should be enough
- Why is Chicken Maryland mentioned separately? It is just like any other variety.
