It means totally different things depending on the region. Arguably, Brazil has the most well developed and varied version of it. Regarding etymological origins, I believe that the term is likely onomatopoeic and is based on a pre-latin etymon. It is both Spanish and Portuguese and related to socarrar. No, like the article says, it is very popular in many Latin American countries, and does very from each one. They are immensely popular here in Brazil, being much like an American barbecue. It is on the list of project Uraguay, shouldn't it be on some Brazilian project too?

Questioned phrasing
