United Nations agencies produce a wide range of materials including publications and web pages that can be used as references, additionally publications cite many other sources that may be useful. UNESCO also collates materials from other sources to databases, clearing houses and portals, you may use any of these as a reference. UNESDOC contains over 146,000 UNESCO documents in full text published since 1945 as well as metadata from the collections of the UNESCO Library and documentation centres in Field Offices and Institutes. The publications can be used directly as references and also cite publications from other sources which may be suitable references.
The majority of new publications produced by UNESCO are available under a Creative Commons Attribution Share-Alike license and so can be used both as references and using the text directly on Wikipedia.
