Thank you for your understanding, in realizing that Wikiversity may be a better fit for what you want to do than Wikipedia. Wikipedia may share your aims of advancing education, but through its articles; hosting class projects is just not what we do. Note that you and your students still have accounts in good standing - the debate was only about deleting your userpage, not your account - so you are free to take up editing Wikipedia articles in the future, should you wish to do so.
I hope you find a stable home on Wikiversity, though to be honest, most of what I'd seen you do to date with your page could have been done with a conventional website. But if you find that the wiki format is advantageous, I do have a suggestion, since you are in the CS department. You could download the MediaWiki software that Wikipedia runs on - it's free and open source - or some other wiki software package, many of which are also free. Then, for a future course, you could have a class set up your own wiki at your university. Your students would learn how to install and run a wiki, an increasingly popular web skill, you would get your own wiki where you wouldn't need to worry about complying with an outside site's policies, and other classes at your university would also be able to set up their own wiki pages, if they saw a benefit in it.
