Great to see another editor with an interest in Greek linguistics here! As for your question about Koine Greek vowels, it seems whenever such questions come up is always when I've just returned my favourite reference for such questions to the library :-( I mostly use Geoffrey Horrocks' Greek: A history of the language and its speakers (1997) as an up-to-date reference. We'll see what we can find about the issue. If you like, you could update the text on the basis what you have in Allen, for the time being - if I remember correctly, Horrocks doesn't contain findings radically different from Allan on that point.
