Usually the wikipedian categories exist for editors to self-sort themselves into. Editing (or in your case creating) userpages that puts an editor into a category is in most cases disruptive. What criteria are you using to decide who goes into that category, that they edited a page related to the area? If that was the case, I'd be put into hundreds of categories. Oh, well usually categories exist to tie articles together with common themes. So Leonardo Davinci is tagged with Category:Italian inventors, and if you go to that category you can see articles on other Italian inventors. If you are working on articles and know of a common thread between them, you can create a new category page. You might take a look at WP:CAT to learn more about the categorisation system here. To change a link from a User:Syrthiss/blablah redlink to just regular text, all you have to do is remove the square brackets around it. However, you may not want to do that because red links let editors know that there are articles for those items that haven't been written yet. If it is something like a person linking every word and those are all red, then yes please feel free to remove those red links.
