Alessandra Spisni is a sfoglina from Bologna, Italy who is the founder of La Vecchia Scuola Bolognese, which she opened in 1993.[1] She is one of the best known faces of Bolognese cuisine and has been described as Italy's most famous pasta maker.[2][3]

Career

A tradition of sfoglinas, her nonna (grandmother) Maria born in 1890 began making sfoglia shortly after World War II.[4] Spisni began workin as a chef when she was 25.[1]

In 1993, she founded La Vecchia Scuola Bolognese, a school to train sfoglini.[5][6] It is the only school of its kind in the world.[5][1]

She is the creator of the Sfoglino d'Oro award, sponsored by the municipality of Bologna, but resigned from her role as president and a judge of the competition in 2011 to allow competitors with a connection to La Vecchia Scuola Bolgonese, which Spisni founded, to compete impartially in the competition.[7] She has been awarded the title of mattarello d’oro (best sfoglina in Italy).[8][9]

She appeared on La prova del cuoco, which aired from 2000 to 2020, gaining many fans across Italy.[10][11] In 2016, it was reported that one of her companies had gone bankrupt due to tax issues.[12] In 2017, La Vecchia Scuola Bolognese moved into a new 280 square meter space with a ribbon cutting attended by the mayor of Bologna.[13][14] She trained the Los Angeles chef Evan Funke.[15]

Private life

She was born in Bologna on October 4, 1959.[16] She is married, to Salvatore, who together had two children Renzo (deceased in 2023) and Stefania.[16][17] Stefania works with her mother as a sfoglina.[18]
