Tuticorin Macaroons
[edit]Tuticorin macaroon is a special type of macaroon available in southern Tamilnadu escpecially in Tuticorin. Tuticorin is a port town in Tamilnadu state of India.
Macaroons in general are made from ground almonds[1]. Tuticorin macaroons are different since they have cashew nut as their major ingredient[2]. One kg of Tuticorin Macaroon cost aroung Rs 600.
History of Tuticorin
[edit]Tuticorin was one of the major seaports during the Pandya kings right from 6th century Ad. It was captured by the Portuguese in 1540 later by the Dutch in 1655 and finally by British in 1825. Tuticorin was established as a municipality in 1886.[3] It attained the status of corporation on August 5 2008.[4]
History of Tuticorin Macaroons
[edit]Tuticorin maccarons are basically European macaroons improved and indignised in Tuticorin. According to one story a baker from Tuticorin who went to Chennai learnt the recipe from an Anglo Indian over there and brought it to Tuticorin where he improved it.According to another story Portuguese sailors who came to Tuticorin used local labour for baking Macaroons who improved it to the present form.[5]
Ingredients

- Egg white
- Fine Sugar
- Cahshew
- Salt[6]
Recipe
[edit]Seperate egg whites from eggs and pour them into a container. Beat them with hand until they become frothy and then add a pinch of salt. Continue beating them with an electronic beater until they become foamy. Add fine sugar and continue beating with medium speed. Increase the speed and continue adding sugar. Now pound and crush cashew and added them to the mixture and mix it.Take a baking sheet lined with aluminium foil. Take a zip lock bag and fill it with the mixture. Cut a small hole in the zip lock at at one corner and press the mixture into the baking sheet in a conical shape. Bake the macaroon for 1 to 1.5 hours. After baking cool it outside for about three hours.[7]
