A good article evaluation can take a number of forms. The most essential things are to clearly identify the biggest shortcomings, and provide specific guidance on how the article can be improved.
Nice job! I enjoy the changes you made to your article. All the information you added and changed made the article more concise and easier to read. To improve the article further I might consider adding more explanations for the different types of dough, for example 'leavened dough.' Just so readers can gauge the different variations and baking practices involved in making beignets.
