1-½ lbs fish steaks or fresh whole fish* 1 t salt ¼ t paprika ¼ t turmeric or saffron ½ t freshly ground pepper 1 large tomato – sliced 1 medium onion – sliced 1 green pepper – cut into rings ¼ cup pimientos or roasted red pepper strips ¼ cup sliced black olives – drained 2 t extra virgin olive oil -- separated Juice of ½ of a lemon 1 clove garlic – minced
Heat oven to 375F Pour 1 t of the olive oil in the bottom of a shallow (glass-like) baking dish Arrange fish in a single layer in the baking dish Sprinkle with salt, pepper, turmeric and paprika Top with green peppers, onions, tomatoes, pimientos and olives Mix remaining 1 t olive oil with lemon juice and garlic. Drizzle over fish. Bake for 15 minutes or until fish is flaky. Garnish with Parsley if you want to.
