Joan Sabaté, Nutritionist

Joan Sabaté is a Spanish American physician and nutrition researcher. He is the Director of the Center for Nutrition, Healthy Lifestyles and Disease Prevention at the School of Public Health at Loma Linda University (LLU) in California and Professor of Nutrition and Epidemiology.[1][2][3][4] His professional focus has been on the impact of plant-based diets on non-communicable diseases.

Research

Dr. Sabaté has contributed to nutrition science in three areas. He was the first researcher to link the consumption of walnuts to significant reductions in blood serum cholesterol. His findings were published in the New England Journal of Medicine in 1993.[5][6][7] Subsequent studies have confirmed and established the mechanisms for these outcomes.[8][9]

He has also worked to establish the health benefits of a vegetarian lifestyle, conducting trials with vegetarian diets.[10][11] He designed a widely used vegetarian food guide pyramid; is Chair of the International Congress on Vegetarian Nutrition;[12] and is a co-investigator on the NIH funded Adventist Health Study-2.[13]

He is also a pioneer of the Environmental Nutrition research efforts.[14]

Public Health Influence

Dr. Sabaté’s research on nuts significantly contributed to the Qualified Health Claims issued by the FDA in 2003 for nuts[21] and for walnuts in 2004. These Qualified Health Claims increased consumer recognition about the health benefits of tree nuts and they are now recommended in the Dietary Guidelines for Americans and by the American Heart Association.

He served on the USDA Nutrition Evidence Library Systematic Review Technical Expert Collaborative on Dietary Patterns in support of the 2015 Dietary Guidelines Advisory Committee. Moreover, he was a member of the 2020 Dietary Guidelines Advisory Committee,[22] representing the Vegetarian perspective.

Criticisms

Concern was raised by nutrition researchers upon release of the study results on walnuts and serum cholesterol conducted in 1993. Dr. William Castelli with the Framingham Heart Study both expressed apprehension about health improvements.[24] Further study laid these concerns to rest.[7] The Nutrition Council criticized the USDA-HHS for including Dr. Sabaté as a member of the 2020 Dietary Guidelines Committee, as his commitment to vegetarianism is religiously motivated.[23]
