About me
I have been studying biology at Lund University and later studied to become a teacher in Biology and Natural science in upper secondary school.
Research area
My PhD project is about the side streams of broccoli and kale, e.g the stems and leaves that are grown in the field but that do not become human food. The aim is to study the amounts of dietary fibres and phenolic compounds (a type of antioxidants) in order to see if there is possibilities to use this plant material to make nutritional human food. Hopefully, my project will result in some methods to minimise the waste in kale and broccoli production and at the same time offer some new, nutritional food products for consumers.
