Not Just California

[edit]

"Pit barbecue" is a term used in many parts of the barbecue belt of the US. For example, note this Flickr photo from Leonard's Pit Barbecue - Memphis, TN.Geoff Who, me? 22:07, 1 April 2010 (UTC)[reply]

Then it deserves a mention in the article. Feel free to add it. Purplebackpack89 (Notes Taken) (Locker) 03:58, 3 April 2010 (UTC)[reply]
Started a new section and added a few photos. Let's see if more turns up about California-style pit barbecues...Geoff Who, me? 16:28, 3 April 2010 (UTC)[reply]
Just a guess here, that a modern barbecue pit would work, and that the key to the result is wrapping the meat in cloth, as that holds in the juices and keeps it from getting dry. Alas, I'm not able to do any experimenting, and any results would literally be Original Research. JDZeff (talk) 22:10, 31 December 2017 (UTC)[reply]
