I've added some projects; one method of finding them is to use the category to find similar articles, look at their talk pages, and see which projects might be suitable. Regarding stub templates, perhaps template:US-poli-stub; it could be added (to the article page), but I'm tempted to suggest that it isn't needed - articles can be short for topics modest in their encyclopedic scope. One other bit of feedback - there is an argument for being more conservative with the use of WP:REDLINKS, the argument being that unless you're confident about their independent notability, its better to create the article first.
