Why would you need a source for cultural artifacts such as, in this case, vegetable korma? We benefit from getting a local's colorful description, even if it's not 100% refined. I don't know about you, but when I'm traveling and want to know what I should eat, I don't need to see a citation for every sentence predicate and offhand observation to reach my gastronomic goals. If we require food articles to be polished with every sentence cited at initial posting, we'll risk scaring off valid contributors in fear of being held to so high a bar. Epicurean explorers will be forced to serve themselves another helping of rogan josh instead of the tasty korma sitting at the far end of the table.

Sorry, but this is blog-level, unsourced/unreferenced, largely unencyclopedic POV writing ("...the subtle flavours...", "...results in a remarkable and memorable dish...","What is fascinating about korma..."), with WP:WEASEL words ("It can be argued that..."). I'm sure the cook who wrote it was passionate about it, but that's an encyclopedia, not the rock magazine equivalent of a dish description.
