Gliadin free barley identified
[edit]Found this information - perhaps someone can work it into the article.
Dr.DH von Wettstein and his team at Washington State University have identified a lysine-rich barley mutant without the gliadin-type and low-molecular-weight glutenins responsible for dough elasticity and baking quality.
If this barley was used to make a malt, which could be used to make a beer - we have a gluten-free all barley-malt beer.
without glycoproteins?
[edit]- Gluten-free beer is beer made from ingredients that do not contain glycoproteins (gluten).
Correct me if I am wrong, but I don't believe that all glycoproteins are gluten, and a plant completely without glycoproteins seems unlikely. Or am I missing something. WormRunner (talk) 02:51, 1 March 2011 (UTC)
