[edit]Amylolytic means of or related to amylolysis, and amylolysis is simply the conversion of starch to sugar by enzymes or acids. It isn't unique to sake brewing; it happens when we digest food. Hanayama (talk) 00:24, 6 December 2008 (UTC)
