Pimento (also known as flavour peppers or seasoning pepper) is a variety of chili pepper that is the most popular cooking pepper on the islands of Trinidad and Tobago.

It is well known for its mild heat and distinct sweet, fruity flavor - ranging from 100-500 Scoville units. [1]

Pimento peppers are ubiquitous in Trinidad and Tobago and are the preferred cooking pepper for the majority of dishes on the island, as well as in seasoning and hot sauces. It has a sweet, fruity and distinct flavour with mild heat.

It is mostly used in Trinidad and Tobago cuisine as well as the cuisines of some other Eastern Caribbean islands. It is often difficult to find in other countries. They are often used by themselves or may be used alongside hotter peppers.
