Baconfest is a mainly midwest interpretation of Thanksgiving, dating back to 1866 AD. It is composed of feasts on every Thursday for three weeks in November, concluding with the grand feast, which falls on Thanksgiving. The holiday originated as a celebration of the release of Colonel James P. Speck’s troops, who were primarily drawn from the midwest region, including what are now the states of North and South Dakota, Nebraska, Michigan and Wisconsin.
