Creamed spinach
Creamed spinach is a dish consisting of a creamy sauce and chopped up spinach, and can be used as side dish or topping. It is a common side dish at steak houses and event fast casual restaurants, that is to say it can be found in everything from frozen TV dinners, casual, to gourmet restaurants.[1]
Examples of Steak Houses that serve creamed spinach, usually with their own special recipe include Ruth Chris,[2] Strip House,[3] and Benjamin's Steakhouse.[4] Recipes vary and some do not contain actual dairy cream.[5] A famous restaurant in Chicago known to serve creamed spinach is the The Berghoff founded in 1898.[6] Creamed spinach is served at the oldest steakhouse in the US, in New York City.[7]
It can also be part of another more complicated recipe, for example in Oreilles d'âne in modern recipe use lasagna or crouzet (see crozets de Savoie) with alternating layers with creamed spinach and grated cheese.[8] It is also used in Eggs Sardou for example, the New Orleans classic.[9] Creamed spinach has been suggested a side dish for Beef Wellington.[10]
Pre-made creamed spinach is common at U.S. supermarkets, and can be used as ingredient in casseroles, dips, stew, spaghetti sauce, soups, smoothies, and other dishes.[11]
Celebrity cook Rachael Ray's recipe for creamed spinach in one dish, used garlic, chopped spinach, salt, pepper, cream, cheese, and a little oil prepared in a pan.[12]
