The nominative "missionary" or "missionaries" describes their primary role in traveling to provide dissemination of their purpose (agricultural mission, cultural mission, education mission, medical mission, religious mission...). The mission is the noun and the field is the modifier. The places they go are not Mission for agricultural, mission for education, etc. They are education missions or educational missionaries.
