That's just his full name. When they signed him and published the news on their website they also named him Gabri, see [7]. He is nearly always called Gabri, just compare [8][9] and [10] for instance. You are doing a pretty good job sorting all over Wikipedia, which I praise, but if you don't know the subject and someone else corrects you please accept it. Common usage is a determiner for article naming, not for category sorting. The sort key must reflect the title of the article, and nothing else. For as long as the article is at "Gabriel García de la Torre", it must sort as such (i.e. Surname, Forename). Were it to be at "Gabri (footballer)", then it would sort as "Gabri", but until then, it must not. If you are right that most sources call him Gabri (which may well be the case), then move the article, but don't change the sort key without moving the article.
