English: Victorinox knife sharpener Sharpy (model 7.8714) for sharpening plain and serrated edges on Swiss Army and other knives and multi-tools.
For sharpening the knife sharpener has to be pulled 2 to 4 times over the cutting edge with pressure.
After that the knife sharpener has to be pulled 4 to 6 times over the cutting edge with light pressure to smooth the edge.
This knife sharpener uses 2 small tungsten carbide inserts set at an angle of approximately 40° to grind a V-shaped steel cutting edge. The inserts scrape metal away from the edge, and leave a sharp, but somewhat ragged or bured, cutting edge.
